Dinner!

So Brett and I decided to try something new, something other than anything and everything wrapped in a tortilla, or veggies on rice. So we have...

Warm Quinoa Salad!


It was delicious, super easy and good for us. It only takes about 20 minutes. As well as gluten free (Alisha), dairy free and vegetarian, high in fiber and protein, low in fat! Oh and I said it was delish right?

2 cups quinoa
1 garlic clove
3/4 tsp. salt (plus a pinch)
2 tbsp. fresh lemon juice
1/2 tsp. black pepper
5 tbsp. extra virgin olive oil
1 15.5 oz can chickpeas, rinsed and drained
1/2 cup sliced almonds
1/3 cup black olives
1/3 cup diced red bell pepper
1 package spinach or arugula ( We used arugula, end of the day farmers market special :)

1. Bring a pot of salted water to a boil; add quinoa and cook until just tender, about 12 minutes. Drain well. Set aside.

2. Using a garlic press or the flat side of a knife, mash the garlic into a paste with the pinch of salt. Place in a large bowl and stir in lemon juice, black pepper and remaining salt, whisk in oil.

3. Add the cooked quinoa and the chickpeas, almonds, olives and bell peppers to the bowl and mix. Serve over the spinach or arugula and drizzle with olive oil.
